At L’Escargot Bleu, food is personal.

Fred Berkmiller – French-born chef, grower, and slow food champion – has spent the past two decades building deep relationships with Scotland’s best small-scale producers.

His cooking is rooted in respect: for ingredients, for the people who grow and rear them, and for the land itself. From rare-breed pork and wild seafood to organic vegetables from his own walled garden just outside Musselburgh in East Lothian, every dish reflects a genuine commitment to sustainability, flavour, and heritage.

Fred doesn’t just cook food – he tells its story, connecting diners with the origin and integrity of what’s on their plate. No shortcuts. No waste. Just proper food, cooked with care.

    Our Garden

    On the outskirts of Edinburgh, our Monkton garden is where we grow vegetables, herbs and salads especially for the restaurant. For us, flavour, freshness and nutrition start in the soil and growing our own ensures we serve the best of all three. It also helps our team reconnect with the land and learn the true value of real food.

    The result? Vibrant, seasonal produce picked at its peak and plated with purpose.

    Over the years, l’escargot bleu has been recognised by Michelin, The Good Food Guide and The List, and voted ‘Best Restaurant in Scotland’ by Slow Food UK in both 2019 and 2021.

    Chef patron Fred Berkmiller has won a string of awards too, including CIS Excellence ‘Chef of the Year’ and a Scotland Food & Drink ‘Food Pioneer’ title.
